COOKING INSTRUCTIONS FOR MOTE:
Soak overnight. Change water, boil for 15 mins and then simmer on low heat for 2-3 hours while adding water to keep wet.
Use for soups and pork casseroles.
RECIPE NUMBER 1: Use as a vegetarian dish by mixing cut tomatoes with chopped onions and salt and place on top of cooked mote with a slice of cheese. Very simple, healthy and delicious!
COOKING INSTRUCTIONS FOR CHUÑO:
Soak in water for 32 hours until completely soft. Remove the peel. Cut into small pieces with fingers. Soak in new water. Squeeze out water. Repeat the last two steps another two times. Then boil in water with salt for 25-30 minutes. Use with soups or as normal potatoes with other dishes.
RECIPE NUMBER 2: Cut onions and fry in oil in saucepan. Add eggs and cooked chuño and mix and cook with medium heat.
COOKING INSTRUCTIONS FOR ORGANIC QUINUA:
Rinse 1 cup quinoa thoroughly with fresh water. Drain. Place quinoa and
2 cups of water in a medium sized saucepan and bring to the boil. Reduce to
simmer, cover and cook until all water is absorbed (10 -15 min).
RECIPE NUMBER 3: You can use Quinua as a substitute for rice! For
example, Add onions, red capsicum, basil, sun-dried tomato, red wine
vinegar, olive oil and mix for a nutritious alternative.
